so i'm learning and getting the feel of my new spark in the local lake.

so when i was giving it some gas i would let go of the handle bars/throttle, with bars turned in either direction and the ski would jump forward for a second or two then idle down..is this normal?

Yes that is called the OTSA. Off Throttle Steering Assistance. Since it is a jet propelled vehicle they have no steering unless there is thrust. So the spark sees steering and no throttle input so it bumps up the throttle to help you steer.
